Quick and Easy Carbonara
One of my favourite pasta dishes, as the name suggests this is
very quick and easy to make. Fantastic with left over roast
chicken or turkey come Christmas time
2 Cloves of Garlic
1-2 Medium Sized Onions
1 Pint Single Cream
8 Rashers Bacon
200-300g Chicken Breast
200-300g Fresh Pasta (I prefer Penne pasta, but any will do)
- Finely slice the onions and fry in butter
until they start to turn brown
- Cut the bacon and chicken into strips or bits (depending how much
time you have!) and add to the onions
- Crush or dice the garlic (depending on how strong you want the taste
to be - crush for stronger, dice for weaker)
- Place the pasta in cold water and bring to the boil
- Add the single cream to the onion/chicken/bacon mix and stir to
thicken
- Drain the pasta and stir in the Carbonara sauce
- Serve
