Muffins - by Amran

This is a sincerely chocolate variety of muffin.

50g of 70%+ dark chocolate.
2 eggs
250ml milk
125ml vegetable oil
100g sugar
100g brown sugar
400g plain flour
4tsp baking powder
1tsp salt
50g of a Cadbury milk choc bar broken into small pieces

set oven to 200 deg centigrade

Wet ingredients

in the following order, make sure to mix in between each stage

melt the chocolate.
add in whisked eggs (make sure choc isn't too hot.  Don't want the eggs to curdle)
add oil
add sugars
add milk
add broken Cadbury choc pieces.

Dry ingredients

Mix flour, salt, baking powder. Be sure to sift the flour, it will help when adding it to the wet ingredients.

Now that you have both sets of ingredients, here comes the important part, the mixing.  Don't over stir/mix the two else you will encourage gluten to form and your muffins will become incredibly bread like, with tunnels and such appearing in them.

Add the flour to the wet ingredients.  I gently pat down the flour to get it into the mixture. Stir maybes 10 times max. you want to spend as little time as possible doing this.  The more time the flour sits there between you adding it to the wet ingredients and getting it into the oven, the more 'bready' it will become.

Don't worry if there are still clumps of flour visible, the oven will take care of that.

Spoon the mixture into prepared muffin tray and cases and bake for 20-25 minutes, or until done.
