Fudge Chocolate Brownies

4 oz butter
3 oz plain chocolate
6 oz soft dark brown sugar
1 tsp vanilla essence
5 oz Self Raising Flour
2 tbsp cocoa powder, sieved
½ tsp baking powder
pinch of salt
2 eggs, size 3, beaten
3 tbsp milk

  1. Heat oven to 180°C, 350°F, Gas Mark 4. grease and line a 11 x 7 inch oblong tin
  2. Melt butter and chocolate in a bowl stood in a pan of hot water
  3. Stir in sugar and vanilla essence. Allow to cool slightly
  4. Mix together flour, cocoa, baking powder and salt
  5. Beat in the chocolate mixture, eggs and milk until smooth, pour into the tin
  6.  Bake for 25 minutes until top is crispy and the inside is still soft
  7. Leave to cool in the tin
  8. Turn out and decorate with milk chocolate icing
  9. Cut into squares

For nutty Brownies, stir in 2 oz chopped walnuts with the chocolate mixture.
