Emily's Weekend Cup Cakes

It has become a bit of a tradition now for Emily and I to make cupcakes at the weekend.  It's a pretty sweet deal really - I make them, Emily eats them!

200g Butter
150g Sifted self-raising flour
50g Good quality cocoa powder
200g Sugar
1tsp Vanilla essence
1/2tsp Baking powder
4 eggs
Some interesting stuff

 

Shove all the ingredients (preferably at room temp) in a bowl bar the "interesting" stuff and mix until a creamy and light.  I tend to find that I need to add a dash of full fat milk to get the right consistency.  Now sort out the "interesting" stuff.  This could be anything really, white chocolate chips,  bits of crunchie bars, bits of fudge bars - basically anything from Emily's Sweet Box except lolipops.  Add a generous amount of your choice into the mix and fold in (don't mix!)

This mix makes 24 cakes, spoon into paper cases.  Cook until done at the correct temperature.  Can't really expand on that other than guess that it is about 180deg and 15 mins.  Its about as long as it takes me to clean up afterwards including eating raw cake mixture with Em out of the bowl, and the temperature marks on our oven have long since worn off.  Pay attention to what is going on, you can pretty much smell when they are done.

Cover with a generous amount of any coloured chocolate - about 400g is sufficient.  And then add smarties, chocolate buttons, jelly tots - whatever you want - to the top.
